On the Start menu, select Settings > Apps > Default apps. Select which default you want to set, and then choose the app. You can also get new apps in Microsoft Store. Apps need to be installed before you can set them as the default.

I have a Dell Inspiron 5558 on Windows 10 21H1 that has taken to resetting the default apps to Microsoft apps on every boot. I have tried the registry entry fixes that I have found and none of them work. It resets all the default apps - browser, photos, music etc. The system is up to date on Cumulative Updates on both Windows and .NET.

Configure default apps by file name extension or by app. For example, to set an installed photo viewing app as the default program that is used to open all of the file types and protocols that it supports, click Set defaults by app, select the photo viewing app > Manage, and then select the file types and associations for the app.
